Summer Squash Winter Squash
Squash is wonderful Native American vegetable. The numerous varieties are categorized as winter or summer squash. Summer squash is picked young and immature; it does not keep well. Winter squash is harvested when fully mature and the varieties are usually good keepers. Squash can be used cooked or raw in a wide variety of dishes. All types of squash are easy to grow and vigorous producers. Squash needs a warm climate to grow well and it is very susceptible to frost. It produces an abundance of fruit throughout the desert summers if it is fed regularly and given adequate water.

Squash packets contain 4.5 grams of seed Each variety has different size seeds; you will find about about 35-45 seeds in each packet. This allows you to plant a good size area in the spring and fall if your climate allows. Squash seeds are viable for about four years when stored in a cool and dry environment.

Cucuzzi Squash (Italian Edible Gourd)
Also known as Cucuzza or Zucchetta Squash, this variety is technically a gourd but it is often referred to as a squash because the young fruit is edible. The squash is pale green with white flesh. Pick the fruit before it reaches 6 inches long. The flavor is sweet and nutty when the squash but it needs to be harvested very early as the skin can be very tough. 55 days.

Dwarf Yellow Crookneck Squash
This is a compact bush type variety that is extremely prolific. The fruits are bright yellow and curved, reaching 8 inches long. Particularly tasty, yellow crookneck squash is very popular. The dwarf plants are ideal for small gardens. 50 days.

Early Prolific Straightneck Squash
A bush type variety that yields fruit with glossy yellow skin and light yellow flesh. The squash is best picked young when the fruit is about 4-6 inches long. The fruit is cylindrical with a slight tapering toward the stem end. 50 days.

Early White Bush Scallop Squash
Also known as Patty Pan. This bush variety produces very early pale green to white, pie shaped scalloped fruit. The squash is best when small as it is most tender and sweet. It has a mild sweet flavor and creamy texture. This variety produces a large number of squash on just a few plants. 50 days.

Tatume or Mexican Squash
This is a vining summer type bearing firm, green, fine flavored fruits. The round fruit is medium to dark green with faint stripes. These are very vigorous hardy vines with an excellent production of fruit. The squash is sweet and delicious baked or steamed. Harvest the fruit when it is about the size of a baseball for best flavor. Left to mature, it can be cooked like a winter squash. When used as a winter squash, the tough skin makes it a good keeper. 52 days.

Black Zucchini (Black Beauty)
This classic zucchini is dark green and cylindrical. It produces an abundant harvest over a long period of time. It is a delicious squash with creamy colored flesh and very dark, almost black skin. Best edible size is around 6 inches long. This popular squash bears well throughout the summer. 62 days.

Grey Zucchini Squash
Grey Zucchini or Mexican Zucchini is a heat resistant variety that produces a light green squash that is flecked with grey. It is very popular in the Southwest and Mexico. Fruit sets all summer long making it terrific for the home garden. The fruit is straight and cylindrical and should be harvested when about 6 inches long for the most tender and mild flavor. If you have never tried this variety, itís worth a place in your garden. 42 days.

Round Bush Zucchini
This variety is a delicious French heirloom known as Ronde de Nice that is far superior to the round hybrids. These beautiful zucchinis are absolutely round and are harvested when the fruit is about 3 inches in diameter. The fruit is a mottled green to gray color with creamy yellow flesh. This is a particular favorite in Southwestern squash dishes. Combine with tomatoes, green chilies and onions for a delicious stew. Bush Table Queen (Acorn) Squash
This vining type of squash produces dark olive green to almost black, deeply ribbed acorn shaped fruit. The orange-yellow flesh is firm, dry and sweet. This variety is very prolific and excellent for storing. This variety can be grown in the summer or fall in mild climates with great success. 85 days.

Buttercup Squash
This is a popular winter squash with smooth dark green/brown skin shaped like a drum or a flattened turban. The blossom end produces a distinctive "button". The fruit is harvested when it is about 6-7 inches in diameter and weighs about 2 pounds. The flesh is sweet, dry and very firm. 90 days.

Waltham Butternut Squash
This vining variety produces large nutty flavored fruit. It is an extremely high yielding squash. The fruit is thick at the stem with a large round bowl at blossom end. Fruits average about 9-12 inches long and weigh about 3 pounds. Its creamy tan rind is tough, making it an excellent storing squash. This variety produces well during our hot and dry Tucson summer and fall seasons. It is one of the best testing winter squash varieties; it is exceptionally sweet and nutty. 100 days.

Delicata Squash
This variety has sweet orange flesh with a delicious sweet potato flavor. The skin is a pale creamy orange color with green to orange stripes that run from the stem to blossom end. The fruit is about 6 to 8 inches long and about 3 inches in diameter. This squash grows on prolific short vines allowing it to grow in a relatively small space. The cavity is filled with seeds and the flavor is marvelous. If you have never tried this variety, be sure to save some room in your garden for this beautiful squash. 100 days.

Spaghetti Squash
Introduced from Japan, this is an unusual and delicious squash. This variety produces cylindrical yellow fruit that is about eight inches long and five inches in diameter. The flesh peels out in long spaghetti like strands. It can be boiled or baked. Add spaghetti sauce for a delicious low calorie, non-wheat dish. This variety does well in hot climates and produces heavy yields over an extended period. 90 days.

Turk's Turban Squash
This heirloom is most notable for its unusual shape and color. The squash resembles a buttercup squash but it has a distinctive orange, green, and red stripes and base color. It simply looks like a brightly colored turban. Because of this, it is often used for decoration. However, it is an excellent choice in a number of dishes; it is delicious baked and stuffed or added to spicy soups. Prepared like winter squash, the flesh is mild flavored but not as sweet as butternut squash. 100 days.

Blue Hubbard Squash
Believed to have originated in South America, this squash is very large with a light blue/green warted shell. The rind is particularly hard, making it a good keeper. The flesh is bright orange, very sweet and often baked or used for pies. This variety can grow to more than 20 pounds but is most often harvested when it weighs 5-10 pounds. 110 days.
