Fresh herbs are flavorful and their fragrance enhances every kitchen and dish. Dried herbs store well for use year round. With the growing concern about the widespread use of irradiated herbs in the market, growing your own varieties assures that your herbs are natural and healthful. Culinary herbs are regaining their popularity as an essential ingredient in even the most simple dishes. Herbs may play an additional role in our diets and in the garden. Almost all herbs offered have some reported therapeutic properties. Today, the medicinal use of herbs in healing is being rediscovered. For those interested in more detail on specific herbs, a number of excellent books are available. Herbs and flowers are often categorized by how often they must be replanted, or the length of time each variety lives. Annuals must be planted every year; they do not weather through more than one season. Perennials live from year to year and often become woody and fibrous as they grow old. Biennials live for two years, often blooming in the second year. We list whether an herb is an annual or perennial at the end of the description..
