Chervil is a member of the carrot family and the leaves resemble carrot tops. The flavor is superb, somewhat like a cross between parsley and tarragon. It's subtle flavor often enhances a dish but never overwhelms. The plant grows about two feet tall with small flowers arranged in umbels. As a companion to beans, chervil improves their growth and flavor. Chervil leaves may be used as a "gourmet parsley" though the flavor is more delicate. Chervil is one of the "fines des herbes" used in classic French cooking in addition to parsley, chives and tarragon. This herb is most often used in salads and soups, or with fish, eggs and sauteed vegetables. (Annual). Packet size: 2 grams. |
